Almond Cookies

Ingredients
50 almonds, blanched
1 cup organic butter
3/4 cup organic honey
1 organic egg, beaten
1/2 teaspoon organic almond extract
1/2 teaspoon organic vanilla extract
2 1/2 cups organic flour
1 1/2 teaspoons organic baking powder
1/8 teaspoon sea salt

Directions:
Preheat oven to 350 degrees. Grind 12 of the almonds to a fine powder. Cream honey and butter together. Add egg, ground almonds, and extract.

In another bowl, sift flour, baking powder, and salt. Add gradually to wet ingredients. Knead into a dough. (Add a drop of water or flour one at a time if necessary to make a kneadable consistency.)

Pinch off small balls of dough and place on greased cookie sheet. Press flat into 1/2 inch thickness. Make an indention in top of each cookie and place a whole almond in each. Bake for 15 minutes.

Banana Bread (Vegan)

Ingredients:
1 package Simply Organic Banana Bread Mix
2 egg equivalent powdered egg replacer
3/4 cup warm water
2 ripe, peeled and mashed medium bananas
Directions:
Preheat oven to 350 degrees.

In a large bowl, combine banana bread mix and egg replacer. Mix in water and mashed bananas. Stir until just moistened.

Pour into lightly greased 9- x 4-inch loaf pan. Bake for 50 to 60 minutes, until center tests done with a toothpick or knife. (May take 5 to 10 minutes longer, depending on oven.)

Cool for 15 minutes in pan, then remove loaf from pan and finish cooling on rack. Cool completely, as bread will slice better.

Chef Suggestions:

Serve plain or toasted, or as a basis for an unusual bread pudding. Use organic ingredients when possible.
